Purslane has oval shaped green leaves and thick red hued succulent stems. Succulent and juicy, Purslane has a slightly tart, tangy, and bitter flavor with hints of lemon. Both the leaves and stems are edible. Purslane contains the most omega-3 fatty acids of any other green vegetable. Also know as verdolagas or Mexican parsley, Purslane is prepared fresh or cooked and features widely in Latin cuisine.
